Broccoli Rice Casserole

Cheesy Broccoli and Rice Comfort Bake

Ingredients:

1 1/2 cups white rice

3 cups chicken broth

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

4 cups broccoli florets, chopped

1 can (10.75 oz) cream of mushroom soup

1 cup sour cream

2 cups shredded cheddar cheese

Salt and pepper to taste

1/2 teaspoon paprika

1/2 cup breadcrumbs

Directions:

Preheat oven to 350°F (175°C).

In a saucepan, bring chicken broth to a boil. Add rice, reduce heat to low, cover, and simmer for 18 minutes, or until liquid is absorbed.

In a skillet, heat olive oil over medium heat. Add onion and garlic, sautéing until translucent.

Steam broccoli until tender-crisp, about 3-4 minutes.

In a large bowl, mix cooked rice, sautéed onion and garlic, broccoli, cream of mushroom soup, sour cream, 1 1/2 cups of cheddar cheese, salt, pepper, and paprika.

Transfer mixture to a greased 9×13 inch baking dish. Top with remaining cheese and sprinkle breadcrumbs evenly over the top.

Bake for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
